Breaded Parmesan Ranch Chicken

I was experimenting in my kitchen today with some chicken that I had unthawed. I wanted to try my hand at making my own panko without buying the stuff. It really turned out decent and saved me money. Always, a bonus! I hope you try this out. Totally worth the effort!

Prep time: 45 min  Bake time: 1 hour  Servings: 5-6 Chicken Breasts

Ingredients:

  • 1 cup (5-6 strips) bacon, cooked (broken to small pieces)
  • 2 cups (8 slices of bread) homemade panko bread crumbs
  • 1 tsp. onion powder
  • 1 tsp. garlic salt
  • 5-6  boneless, skinless chicken breasts
  • 1 cup ranch dressing
  • ⅓ cup parmesan cheese, grated
  • salt and pepper to taste

Directions:

  1. For homemade panko bread crumbs: Freeze 8 slices of whole wheat bread for 1 hour. Take out of freezer; cut and discard crusts. Cut 8 slices into strips and place into a food processor to make coarse crumbs. Spread the crumbs on a clean cookie sheet (with sides). Sprinkle onion powder and garlic salt. Keep an eye on crumbs and stir/shake at midway point of cooking time, while baking at 300 F degrees (about 10-15 minutes). Do not let crumbs get toasted. Let cool before using. Set aside.
  2. Cook bacon till crispy, let cool, then break to small pieces. Place in a small dish. Set aside.
  3. Preheat oven to 350 F degrees. Shred parmesan cheese, and combine with homemade panko bread crumbs on cookie sheet. Drudge chicken breasts in ranch dressing evenly on both sides. (Let marinate for about 5-10 minutes.) Coat chicken breasts in bread crumbs on cookie sheet. Place in a greased 9×13 pan and sprinkle bacon on top with salt and pepper to taste. Bake for 1 hour (or until chicken is done and tender).

Cabbage (with ground turkey) Rolls

I am a big cabbage fan! I have tried to adapt my sons tastes buds to different veggies and I think cabbage is the perfect “gateway” veggie for trying new tastes and textures… not to mention smells! :-D

This was a big hit. Both my boys ate it with flying colors. They gave it a thumbs up, but not to the cooked cabbage smell. I don’t blame them… me neither.

I served these rolls with mashed potatoes, corn, and my Cheesy Mozzarella Rolls! AMAZING!!! I loved mixing up the ground turkey with the potatoes. YUM!

Prep Time: 5 min Cook Time: 25-30 min + 3-4 hours in slow cooker Ready In: 4 hours 30 min Servings: 4-6

Ingredients:

  • 1 lb. head cabbage
  • 2 tbs. of olive oil or butter
  • 1 onion, medium, minced
  • 1 lb. ground turkey
  • 3 clovers, garlic, minced
  • ½ tsp. each salt and pepper
  • ½ tsp. oregano
  • ½ tsp. basil
  • ½ tsp. rosemary
  • ½ tsp. thyme
  • ¾ cup chicken broth

Directions:

  1. Cut cabbage in half and cut out core. Boil cabbage for 3-4 minutes. Peel off 10-12 large leaves and set aside. Slice remaining cabbage into small pieces.
  2. Heat a large sauté pan over medium heat. Add oil and cook ground turkey with spices and garlic until brown, about 8-10 minutes. Add sliced cabbage to the party. Cook for about 10 minutes more.
  3. Roll up about 1/4-1/2 cup cooked (depending on the size of the cabbage leaf) turkey mix into cooked cabbage leaves. Place in crock pot and pour chicken broth over the leaves.
  4. Cover. Cook on Low for 3-4 hours.

Slow-Cooker Pork Sirloin Tip Roast

Isn’t it great when you can get meat in bulk at a low price at your local meat market!?! LOVE IT! I got a few Pork Sirloin Tip Roasts on the cheap and couldn’t wait for the smell of them to fill my home. AMAZING!

This would be a great recipe for any holiday or a great big meal dish! If you are looking for some sides for this protein… in my opinion, pork tastes great with a simple side of green beans, mashed potatoes, cranberry sauce.

AND don’t forget the bread. YUM!!

Prep time: about 10 mins  Cook time: 4-6 hours  Total time: about 6.5 hours  Serves: 4-6

Ingredients:

  • 2-3 pound Pork Sirloin Tip Roast (or any cut of pork meat)
  • 1/4 cup balsamic vinegar (or apple cider vinegar)
  • 1/4 cup honey
  • 1/4 cup butter, melted
  • 1 tsp. Worcestershire sauce
  • ¼ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • ¼ tsp. ground ginger
  • 1 tsp. ground thyme
  • 1 tbs. fresh parsley
  • 1 tbs. fresh rosemary
  • 1/2 cup beef broth
  • ½ cup natural maple syrup
  • 1 medium onion, quartered

Directions:

  1. Use a 4-6-quart slow cooker. Score diagonal cuts on outside of roast with a sharp paring knife (to help get the juices flowing while cooking.) Place ham into slow cooker.
  2. In a small bowl, combine vinegar, honey, butter, Worcestershire sauce, spices, broth and maple syrup. Pour mixture evenly over the ham, place quartered onion on top.
  3. Cover and cook on low for 6 hours (or on high for 4 hour). Let rest 10-15 minutes.
  4. Enjoy!
