Slow-Cooker Pork Sirloin Tip Roast

Isn’t it great when you can get meat in bulk at a low price at your local meat market!?! LOVE IT! I got a few Pork Sirloin Tip Roasts on the cheap and couldn’t wait for the smell of them to fill my home. AMAZING!

This would be a great recipe for any holiday or a great big meal dish! If you are looking for some sides for this protein… in my opinion, pork tastes great with a simple side of green beans, mashed potatoes, cranberry sauce.

AND don’t forget the bread. YUM!!

Prep time: about 10 mins  Cook time: 4-6 hours  Total time: about 6.5 hours  Serves: 4-6

Ingredients:

  • 2-3 pound Pork Sirloin Tip Roast (or any cut of pork meat)
  • 1/4 cup balsamic vinegar (or apple cider vinegar)
  • 1/4 cup honey
  • 1/4 cup butter, melted
  • 1 tsp. Worcestershire sauce
  • ¼ tsp. ground cinnamon
  • ¼ tsp. ground nutmeg
  • ¼ tsp. ground ginger
  • 1 tsp. ground thyme
  • 1 tbs. fresh parsley
  • 1 tbs. fresh rosemary
  • 1/2 cup beef broth
  • ½ cup natural maple syrup
  • 1 medium onion, quartered

Directions:

  1. Use a 4-6-quart slow cooker. Score diagonal cuts on outside of roast with a sharp paring knife (to help get the juices flowing while cooking.) Place ham into slow cooker.
  2. In a small bowl, combine vinegar, honey, butter, Worcestershire sauce, spices, broth and maple syrup. Pour mixture evenly over the ham, place quartered onion on top.
  3. Cover and cook on low for 6 hours (or on high for 4 hour). Let rest 10-15 minutes.
  4. Enjoy!

Slow Cooker Lasagna

If you are like me, I love coming home to a house filled with the smell of a delicious slow cooker meal! This isn’t a 8 hour slow cooker meal though; only 4-6 hours. So if you have a busy afternoon, you can put this together by 11:00 that morning and it will be done by 4 or 5 in the afternoon. (Around my house, we eat at 5 o’clock – at the latest.) I found the original recipe at Betty Crocker, and made a few of my own adaptations.

Prep Time: 25 Min Cook Time: 4 to 6 hours Servings: 8

Ingredients:

  • 1 pound ground hamburger (or italian sausage)
  • 1 medium onion, chopped (1/2 cup)
  • 2 jars (24 oz. each) italian-style tomato sauce (or your choice spaghetti sauce)
  • 2 teaspoons dried basil leaves
  • 1/2 teaspoon salt
  • 2 cups shredded mozzarella cheese (8 ounces)
  • 1 container (16 oz.) part-skim cottage cheese
  • 1 cup grated parmesan cheese
  • 8 uncooked lasagna noodles

Directions:

  1. Cook meat and onion in 10-inch skillet over medium heat 6 to 8 minutes, stirring occasionally, until meat is no longer pink; drain. Stir in tomato sauce, basil and salt.
  2. Mix 1 cup of the mozzarella cheese and the cottage and parmesan cheeses. (Refrigerate remaining mozzarella cheese while lasagna cooks.)
  3. Spoon one-fourth of the meat mixture into 6-quart slow cooker; top with 4 noodles, broken into pieces to fit. Spread with half of the cheese mixture and one-fourth of the meat mixture. Top with 2 noodles, remaining cheese mixture and one-fourth of the meat mixture. Top with remaining 2 noodles and remaining meat mixture.
  4. Cover and cook on low heat setting 4 to 6 hours (or until noodles are tender).
  5. Sprinkle top of lasagna with remaining 1 cup mozzarella cheese. Cover and let stand about 10 minutes or until cheese is melted. Cut into pieces. Cool, and enjoy!

Slow-cooked Pulled BBQ Chicken Burritos

Spunky with a sweet zing! This chicken meal is fantastic in a tortilla but could be great even on a dinner bun!

Prep Time: approx. 5 Min Cook Time: 3-8 hours Servings: about 5

Ingredients:

  • 1 1/2 lbs. of boneless/skinless chicken breasts
  • 1 cup of your favorite BBQ sauce
  • 1/2 cup of packed brown sugar
  • 1/3 cup of mustard
  • 2 Tbs. minced garlic
  • 5-6 Tortilla Wraps

Directions:

  1. In slow cooker, place chicken. In small bowl, combine all ingredients. Mix well. Pour over chicken. Cover.
  2. Cook on high 3 hours or low 6-8 hours. Periodically fork through meat to separate.
  3. When sauce is thick, (and the smell of the BBQ is just as thick in your house) serve on a tortilla wrap. Enjoy!
