Cookie Dough Fudge (*no eggs)

Decadent and a must share treat! This recipe has NO eggs in it, so guilt free. . . maybe. ;-) Did I mention also it is a “no-bake” dessert. {squeal!}

Prep Time: 15 min Total Time: 20 min Yield: about 24 servings

Ingredients:

  • 1 cup (2 sticks) butter, softened
  • 1 1/4 cup firmly packed light brown sugar
  • 2 tablespoons milk
  • 1 tablespoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 6 oz. (about 1/2 pkg.) Semi-Sweet Chocolate Morsels
  • + 1 (12-oz. pkg.) bag Semi-Sweet Chocolate Morsels, melted over double boiler for frosting

Directions:

  1. COMBINE butter, light brown sugar, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Combine flour, salt and baking soda. Mix into butter mixture until just blended. Stir in 6 oz. of chocolate chips. Form with spatula cookie dough in a 2 qt (12 X 8) rectangle dish. Place in freezer.
  2. Simmer a pan of water and place a heat proof metal bowl on top – to create a double boiler effect. Melt 12 oz. of chocolate chips. When the chocolate has reached a smooth consistency – take cookie dough out of freezer then spread melted chocolate with a frosting spatula over dough. Place in refrigerator for 30 minutes to firm up. Cut into 24 bars. Enjoy!

*Update: Another option (if you don’t like hard/candy like chocolate topping on your bars)… is to melt down {in a sauce pan, medium heat} 1 cup sugar, 1/4 cup milk, 1/4 cup butter, and 1 bag chocolate chips. Spread frosting on fudge bars and cool in refrigerator at least 1 hour to firm. This will make the chocolate a nice creamy/thicker fudgy (… is that a word?) texture.
